Easy Spring Salad Recipe

The perfect recipe to add to your spring lunches & dinners. This spring salad recipe is full of delicious flavours and ready in less than 15 minutes!

Ingredients
  

  • 4 cups Lettuce
  • 2 Radishes sliced
  • 1/3 cup peas
  • 1/4 cup pistachios chopped
  • 1 Avocado sliced
  • 1/2 cup Feta crumbled
  • 1/2 English Cucumber sliced
  • 1 Carrot shaved
For Salad Dressing
  • 1/4 cup Extra Virgin Olive Oil
  • 1 Garlic Clove minced
  • 1 tbsp Fresh Lemon Juice
  • 5 Mint Leaves
  • 1/2 tsp Salt
  • 1/4 cup Honey

Equipment

  • 1 Cutting Board
  • 1 Large Knife
  • 1 Large Salad Bowl
  • 1 Lemon Juicer Optional

Method
 

  1. Begin by prepping your ingredients. Slice your radishes & cucumber thinly, chopped pistachios, dice avocado, crumble feta, and shave carrot into ribbons.
  2. In a large bowl add your lettuce.
  3. Add the remainder of your ingredients over top and toss.
  4. Pour dressing over your salad, stir and enjoy!
For Dressing
  1. Begin by mincing your garlic and chopping your mint.
  2. Add all ingredients to a jar and stir or shake until completely combined.

Storage

Have some leftovers? Store both your dressing and your salad in the fridge for up to 2-3 days. If you have dressed the entire salad, you probably have a few hours before disaster strikes (no one likes a soggy salad). 

Pairing

Since we’re sticking with our spring theme, this salad would pair perfectly with a creamy spring pasta recipe or with chicken cutlets, steak, and roasted potatoes. Looking to add some protein? Add some chicken or tuna to make this a complete meal instead. 

Shelf Live

I highly recommend dressing your salad right before you’re about to serve it, and don’t dress the entire salad, just the individual portions. If you store the salad and dressing separately, they should have a shelf life of about 2-3 days.
