Air Fryer Spring Rolls

Air fryer spring rolls are snack legends, crispy, flavourful, and ridiculously easy. Stuffed with veggies, they're guilt-free and healthy munchies! Dive into sweet chili or soy sauce for a flavor blast. Quick, fuss-free, and seriously addictive. Brace yourself for the ultimate casual and healthy snacking experience!

Ingredients
  

  • 8 Spring Roll Wrappers The large ones
  • 2 Carrots peeled
  • 1 Zucchini
  • 2 heads Bok Choy
  • 1-2 tbsp Soy Sauce
  • 2 Green Onions
  • 1 Garlic Clove
  • 1 tbsp Sesame Oil
  • Pepper to taste

Equipment

  • 1 Air Fryer
  • 1 Knife
  • 1 Large Cutting Board
  • 2 Medium Bowls
  • 1 Small Bowl
  • 1 Grater Optional

Method
 

  1. Begin by chopping up your veggies into fine pieces. For your carrot and zucchini it may be easier to grate them.
  2. Turn your stove to medium heat and in a medium pan add in a tbsp of sesame oil and add your minced garlic & green onion. Cook for 1-2 minutes.
  3. Add in your veggies, soy sauce, and pepper and let cook until all liquids are evaporated.
  4. Add your mixture to a large plate and pop in the fridge to cool. About 20 minutes.
  5. Grab your spring roll wrappers, add about two heaping tbsp of your veggie mixture to the centre and fold. Seal the corner of your spring rolls with a touch of water.
  6. Add your spring rolls to an air fryer, and lightly coat with olive oil. Cook at 400 for 5 minutes. Rotate and repeat for another 5 minutes.
  7. Once cook, add to a serving dish and enjoy with your favourite Thai sauce!

Storage

Store your spring rolls in an air tight container in the fridge. When you’d like to enjoy them again, you’ll need to re-air fry them to get that crunch back! 

Pairing

These spring rolls are perfect to share with stir fry night, or my personal favourite, Thai curry (specifically panang curry). This recipe also makes for a delicious appy to serve at dinner parties!

Shelf Live

Your spring rolls are good in the fridge for 2-3 days, however as mentioned, you will need to re-air fry them before serving.
