Spicy Edamame & Kale Dip

One of my most popular recipes of all time is this Spicy Edamame & Kale Dip! Inspired by the Farm Boy's Edayummy dip, this is the perfect dip to serve at gatherings or to prep for after work/school snacks. I can promise you it won't last long in your fridge!
Prep Time 20 minutes
Servings: 4 Servings
Course: Appetizer

Ingredients

  • 1 1/2 cup Edamame
  • 1 cup Kale
  • 1 Jalapẽno
  • 2 Garlic Cloves
  • 1/2 Lemon juiced
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 2-3 tbsp Extra Virgin Olive Oil

Equipment

  • 1 Cutting Board
  • 1 Knife
  • 1 Food Processor or Blender
  • 1 Lemon Juicer

Method

  1. Begin by removing the skin from your edamame, and add to your food processor or blender.
  2. Next add the rest of your ingredients and blend for 30 seconds to 1 minute. If your mix is having trouble blending, add 1 tbsp of water at a time to loosen things up.
  3. Serve with chips and enjoy!
