Korean Lettuce Wraps With Chicken

This is an easy chicken lettuce wrap recipe with Asian inspiration and ready in only 20 minutes! If you're looking for a healthy option for lunches or meal prep, these wraps are only 300 calories per serving, low carb, and packed with protein!

Ingredients
  

For Wraps
  • 2 Chicken Breasts boneless skinless
  • 8 large Lettuce Leaves
  • 1/3 cup Jalapẽno
  • 1/3 cup Carrots grated
  • 1 Avocado
  • 1 Garlic Clove minced
  • 1 tbsp Ginger fresh preferred
  • 1 tbsp Brown Sugar
  • 1 tbsp Soy Sauce
  • 1 1/2 tbsp Gochujang Paste
  • handful Cilantro
Greek Yogurt Sauce
  • 1/2 cup Plain Greek Yogurt
  • 1 Garlic Clove minced
  • 1 tbsp Lemon juiced
  • pinch Salt & Pepper

Equipment

  • 1 Medium Frying Pan
  • 1 Knife
  • 2 Cooking Boards 1 for meat and one for everything else.
  • 1 Grater

Method
 

Lettuce Wraps
  1. Begin by dicing your chicken into bite-size pieces. If you're using ground chicken skip this step.
  2. In a small bowl mix your gochujang paste, minced garlic, minced ginger, soy sauce, and brown sugar until fully combined.
  3. On medium-low add in some oil olive (or whatever you have), and cook your chicken for 2-3 minutes. Add in your sauce and cook for another 5 minutes until fully cooked through
  4. Let your chicken cool before assembling!!
  5. In the meantime grate your carrots, slice your avocado & jalapeno. 
  6. Once your chicken is cooled assemble onto your romaine lettuce leaves and enjoy!
For Greek Yogurt Dip
  1. Combine all your ingredients in a bowl and stir.
