Chicken Stir Fry with Peanut Sauce

Today we're making one of my favourites, chicken stir fry with peanut sauce! The star of this dish? Powdered peanut butter! This allows for a healthier option for dinner or meal prepping for the week ahead.

Ingredients
  

  • 1.5 lbs Chicken Thighs or breasts
  • 1 cup Rice
  • 4 cups Veggies I used bok choy, peppers and zucchini
  • 3 Garlic Cloves
  • 2 Green Onions
  • 1 Jalapeno or chilli
  • 2-3 tbsp Powdered Peanut Butter you can also use regular peanut butter
  • 1/2 cup Chicken Stock or beef stock
  • 1 tbsp Soy Sauce
  • 1 tbsp Honey
  • 1 handful Basil
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Cornstarch optional

Equipment

  • 1 Large Pan
  • 1 Medium Pot
  • 1 Cutting Board
  • 1 Knife

Method
 

  1. Begin by mincing your garlic, slicing your green onions, and finely dicing your jalapeño and add to a dish
  2. Next, slice all your veggies and set aside. In a separate bowl, slice your chicken into equal pieces.
  3. Add 2 cups of water to your pot and bring to a boil. Once boiling, reduce to low and cook rice for 15 minutes or per packaging instructions.
  4. In a large pan, add your olive oil and turn the heat to medium .
  5. Once heated, add in your garlic, green onion and jalapeño and cook for 2 minutes.
  6. Next, add in your chicken and cook for another 2-3 minutes.
  7. Add in your veggies and cook for another 10 minutes.
  8. Combine your powdered peanut butter with 1 tbsp of water. Mix into a paste. Next, add your chicken broth, soy sauce, honey and basil
  9. After your chicken & veggies have cooked for 10 minutes (and the chicken is cooked through), add in your sauce and let cook for another 2 minutes.
  10. If your sauce is liquid, combine 1 tbsp of cornstarch with 1 tbsp of water and add to your sauce. Let cook for another couple minutes and it should thicken up. Enjoy!

Storage

I recommend storing your chicken stir fry and rice separately in air tight containers. This prevents the rice from soaking up all your sauce. 

Pairing

This recipe is pretty much a complete meal, but if you’re looking for a little extra, consider adding green onions (or crispy onions), sesame seeds, or sriracha to the top. 

Shelf Live

They say rice is only good in the fridge for a couple days… so we’re sticking to that. However, your stir fry should be good for up to a week in the fridge. If you plan on meal prepping, consider making two batches of 1/2 cup of rice!
