- Begin by mincing your garlic, slicing your green onions, and finely dicing your jalapeño and add to a dish
- Next, slice all your veggies and set aside. In a separate bowl, slice your chicken into equal pieces.
- Add 2 cups of water to your pot and bring to a boil. Once boiling, reduce to low and cook rice for 15 minutes or per packaging instructions.
- In a large pan, add your olive oil and turn the heat to medium .
- Once heated, add in your garlic, green onion and jalapeño and cook for 2 minutes.
- Next, add in your chicken and cook for another 2-3 minutes.
- Add in your veggies and cook for another 10 minutes.
- Combine your powdered peanut butter with 1 tbsp of water. Mix into a paste. Next, add your chicken broth, soy sauce, honey and basil
- After your chicken & veggies have cooked for 10 minutes (and the chicken is cooked through), add in your sauce and let cook for another 2 minutes.
- If your sauce is liquid, combine 1 tbsp of cornstarch with 1 tbsp of water and add to your sauce. Let cook for another couple minutes and it should thicken up. Enjoy!
