Spicy Pork and Vegetable Stir Fry

Imagine this: a tasty pork and veggie stir-fry with fluffy rice, coated in a super-easy sauce. Juicy pork meets colorful veggies, all sautéed up for a flavor explosion. Not only is it delicious, but it's also a healthy choice for dinner or meal prep for the week ahead. Win-win!

Ingredients
  

  • 1 lbs Pork Tenderloin or 1 lbs or ground pork
  • 1 Carrot
  • 1 Red Pepper
  • 2 Bok Choy Or 150g
  • 1 cup Rice
  • 2 tbsp Garlic Chilli Sauce
  • 2 Garlic Cloves minced
  • 1 tbsp Ginger grated
  • 2 tsp Stevia Brown Sugar or regular
  • 2 tbsp Light Soy Sauce
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Cornstarch
Optional Extras
  • Cilantro
  • Green Onions
  • Sesame Seeds
  • Sirarcha

Equipment

  • 1 Large Pan
  • 1 Medium Pot
  • 1 Knife
  • 1 Cutting Board

Method
 

  1. Begin by mixing your sauce. Add your minced garlic & ginger, garlic chilli sauce, rown Sugar and soy sauce to a bowl and set aside.
  2. Slice your pork into thinly sliced pieces and your veggies into even bite-sized pieces.
  3. Optional: If you want your pork to be extra tender, mix in a bowl with 1 tbsp of cornstarch before cooking.
  4. Before starting your stir fry, begin cooking your rice as per packaging instructions.
  5. In a large pan on medium-low, add in your olive oil, followed by your pork. Let cook for 3-4 minutes until mostly cook. Remove from your pan and set aside.
  6. In the same pan, add in your veggies and cook for 5-7 minutes.
  7. Add your pork back in & tour sauce to your pan, and let cook for it another 3-4 minutes, ensuring your pork is cooked through.
  8. If your sauce is not thick. Mix 1 tsp of cornstratch with 1 tsp of water, then add to your stir fry. Let cook for another minute.
  9. Add your rice and stir fry to a bowl and top with your favourite extras.
  10. Then, of course, enjoy!

Storage

I recommend storing your stir fry mix and rice separately in the fridge! This helps prevent the rice from soaking up all the moisture in your stir fry. 

Pairing

This is already a pretty complete meal, but I recommend topping it off with sesame seeds, sriracha, green onions, cilantro or a splash of lime! 

Shelf Live

Typically, rice is only good for a few days in the fridge (however, I know many of us are pushing that limit). The stir fry will survive for about a week, so plan accordingly!
