Air Fryer Shrimp Tacos

The perfect addition to your summer menu. These air fryer shrimp tacos are a healthy dinner ready in less than 30 minutes.

Ingredients
  

For Shrimp
  • 12 Shrimp deshelled
  • 1/3 cup Flour
  • 1 cup Panko
  • 1/4 cup Coconut Flakes Unsweetened
  • 2 Eggs
  • 1 tbsp Milk
  • 1/2 tsp Salt
  • 1/2 tsp Paprika
  • 1/2 tsp Garlic Powder
  • 2 tbsp Extra Virgin Olive Oil
For Tacos
  • 4 Soft Taco Shells
  • 1 cup Lettuce
  • 1 Tomato
  • 1/2 cup Cheddar Cheese shredded
  • 1/2 cup Coleslaw I prefer the vinegar based vs creamy.
  • 1 Avocado
Optional
  • Cilantro
  • Lime
  • Sour Cream

Equipment

  • 1 Air Fryer
  • 3 Bowls for dredging
  • 1 Cutting Board
  • 1 Knife

Method
 

For Shrimp
  1. Begin by setting up your three bowls.
  2. In your first bowl, add your flour, paprika, garlic powder & salt, and stir until combined.
  3. In the second bowl, add your eggs and milk and beat until combined.
  4. In the third bowl, add your panko bread crumbs & coconut flakes.
  5. If your shrimp have the shell still on them, make sure to remove it.
  6. Bread your shrimp one by one starting with the flour, then the egg, and finishing them in the panko mixture.
  7. Set your air fryer to 400 degrees, and place your shrimp in your basket without overlappi ng them. Lightly drizzle with your olive oil and cook for 5 minutes on each side.
For Tacos
  1. chop your lettuce, dice your tomatoes & avocadoes, shred your cheese & slice your jalapenos
  2. Optional Step: heat up your tortillas in the microwave or on the stovetop. This helps soften them, making them extra delicious!
  3. Assemble your tacos however you like and enjoy! I like to add my shrimp on the bottom of my tortilla and add everything else on top

Storage

For the shrimp, store them separately in an air-tight container and place them in the fridge. Veggies & cheese can also be stored in the fridge in a separate container. For the tortillas, store them in the original package or in a zip-lock bag, removing as much air as possible. 

Pairing

These air fryer shrimp tacos can easily be served with a light side salad. Aim for something with a vinaigrette dressing. Looking to start the party early? Serve an appy of tortilla chips with salsa/guacamole. 

Shelf Live

For leftovers, your shrimp and veggies are good for 2-3 days. I highly recommend popping your shrimp back in the air fryer for 3-4 minutes at 350. This helps bring that crispiness back to life!
