Ingredients
  

  • 1/2 jar Strained Tomatoes or passata
  • 2 Bell Peppers red, yellow or orange
  • 1 Chicken Breast diced
  • 1 Jalapeno diced
  • 1 Can of Corn or 2 combs of corn
  • 3 Green Onions chopped
  • 3 Garlic Cloves minced
  • 1 1/2 tbsp Ancho Chilli Powder regular will work too
  • 1 Chicken Stock Cube
  • 4 cups Water
  • 3/4 cup Milk 2% or whole
  • 2 tbsp Extra Virgin Olive Oil
  • Salt to taste
  • 1 bag Tortilla Chips for serving
Optional (But Recommended)
  • Sharp Cheese
  • CIlantro
  • Fresh Lime Juice

Equipment

  • 1 Large Pot
  • 1 Large Cutting Board
  • 1 Knife
  • 1 Cheese Grater Optional

Method
 

  1. Begin by dicing your onions, garlic, peppers, and jalapenos.
  2. In a large pot on medium heat, add your olive oil, diced garlic and onions, and cook for 1-2 minutes
  3. Using a separate cutting board and knife, dice your chicken and add to your pot.
  4. Add in your peppers and jalapenos, and let cook them for 2-3 minutes
  5. Add in your corn, tomatoes, and ancho chilli powder, and let cook for 5 minutes.
  6. Add your water and chicken cube and let cook for 15 minutes. Bring your stove to high until your soup begins to boil, then reduce to medium to finish cooking.
  7. Turn your burner off and whisk in your milk until fully combined.
  8. Serve with grated cheese, tortilla chips, cilantro or lime and enjoy!
